The templates are installed and I selected the template I want to use but it doesn't change the display of the products.

Several possiblities. Make sure that:

1) the module is enabled. This is an option on the module's "options" tab
2) that you have assigned the template to the category you're looking at in the store. You can assign a category by going to the template's "Category Assignments" tab. Click on the "All" link, checkoff the categories you want this template assigned to, then click on update. You can also assign a template by going directly to the category's admin screen, to teh "Category Page Templates" tab.
3) if you installed the OpenUI AFTER you installed the template module then it will be necessary to go to the template module's admin screen and click on "update". That will register it with the OpenUI.
4) you have the OpenUI installed AND selected as the layout module for you store.
